Ingredients

  • 1/2 cup Grimmway Farms Shredded Carrots
  • 1/2 cup fresh pineapple, minced
  • 1/2 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 Tbsp. baking powder
  • pinch of salt
  • 1 cup coconut milk
  • 1 Tbsp. oil
  • 2 tsp. vanilla extract
  • 1/2 cup walnuts, garnish
  • 4 Tbsp. low-fat cream cheese, garnish
  • 4 Tbsp. honey, garnish

Directions

Combine all ingredients through vanilla extract into batter. Scoop onto a hot griddle and cook through on both sides. While hot, top two pancakes with a tablespoon of cream cheese, a few walnuts, and a drizzle of honey.
