Ingredients

  • 2 Tbs Olive Oil
  • 1 Tbs Lemon Juice
  • 1/2 tsp Dijon Mustard
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Black Pepper
  • 1/2 lb Shredded Carrots
  • 1 Tbs Parsley, for Garnish

Directions

In a large bowl, whisk oil, lemon juice, Dijon, salt and pepper.

Add carrots and stir to mix well.

Garnish with parsley and serve.
