Ingredients

  • 1 lb. Grimmway Farms Carrots
  • 1 small onion, cut in thin wedges
  • 1 Tbsp. olive or vegetable oil
  • 1 Tbsp. fresh chopped parsley
  • 1/4 tsp. salt
  • 1/4 tsp. pepper

Directions

Toss carrots and onion with oil. Arrange in single layer in 13x9x2 inch baking pan, sprayed with no stick cooking spray. Roast at 450 degrees, stirring occasionally, until carrots are lightly brown and just tender, about 20 to 25 minutes. Stir in parsley, salt and pepper.
