A High-Vegetable Diet Could Extend Your Life
New research finds that eating right won't just help you look and feel better - it may actually extend your life. The study found women who ate a high-vegetable diet had a reduced risk of death compared to women who ate a traditional, high-fat Western diet. For generations, parents have told reluctant children, "Eat your vegetables! They're good for you!"
Mom and Dad are now getting an assist from scientific research that shows just how good those vegetables can be, especially when eating them becomes a lifelong habit.
Researchers from the Harvard School of Public Health have been tracking dietary patterns in more than 70,000 female nurses for several decades. They found that women who ate diets high in leafy green vegetables such as spinach, along with broccoli, squash, tomatoes and other fresh veggies had 28 percent lower risk of death from heart disease compared to women who ate the fewest vegetables.
Women following the healthy diet also ate more fish, poultry, and fresh fruit. The study found those eating the diet lowered their overall risk of death by 17 percent. In contrast, women who ate the most Western-style diet - with red meat, pizza, French fries, and soda - had a 16 percent increased risk for death from cancer.
